Ingredients

  • extra virgin olive oil, 2 tablespoons
  • 1 thinly sliced shallot
  • 1 pound of mixed mushrooms, torn or sliced
  • salt and pepper
  • butter, 4 tablespoons
  • 2 garlic cloves, smashed
  • fresh thyme leaves, 2 tablespoons
  • freshly chopped sage, 1 tablespoon
  • balsamic vinegar, 3 tablespoons
  • cheese ravioli, 1 pound
  • fresh herbs for garnish

Recipe

Now, let’s get on with the recipe:

  1. To start, bring a pot of salted water to boil. Cook the ravioli according to packaged instructions; drain the ravioli, making sure to reserve ½ cup of the pasta cooking water.
  2. As the ravioli cooks, start heating olive oil in a large skillet over high heat. Once the oil shimmers, add shallots and cook for 2-3 minutes, or until fragrant. Add mushrooms, season them with salt and pepper.
  3. Cook the mushrooms for 5 minutes or until they are golden. Then, stir and cook the mushrooms for 3-5 minutes or until caramelized.
  4. Add butter, sage, garlic, and thyme. Cook for about 5 minutes, making sure to stir occasionally.
  5. Add a splash of the pasta cooking water that was saved and the balsamic; then cook for 2 minutes. Remove from the heat and trash the garlic cloves.
