Picking The Best Apples

Before you get started, let’s look at some of the best apples to use while making your apple pie.

  • Jonagold: These are a cross between the Jonathan and the Golden Delicious apples. They are known to have an aromatic flavor that is both sweet and sharp. These apples will hold their shape during baking.
  • Honey Crisp: These apples have a honey sweet and tart flavor. They will hold their shape when baking.
  • Golden Delicious: Sweet yellow apples that will hold their shape during baking.
  • Granny Smith: The wonderfully tart flavor of Granny Smith apples often draws people to use them. However, these apples do not hold their shape and will turn mushy when cooked. Be sure to combine with other varieties, not using more than 2 Granny Smith apples in the pie.

  2. Next, melt 4 tablespoons of the butter into a large skillet on medium heat.
  3. Add the apples to the skillet and cook them until softened (12-15 minutes). Make sure to stir occasionally.
  4. Add the flour cinnamon and salt to the skillet and stir until the juices thicken (approximately 2 minutes).
  5. Remove from heat and let cool.
  6. Ease 1 disk of dough into 9-inch pie plate. Add the cooled filling to pie crust and dot with remaining 2 tablespoons of butter.
  7. Roll out second disk of dough into 12-inch circle. Lay over the filling, pressing crusts together at the edges and making sure to fold and dough that hangs over under itself, crimping with your fingers.
  8. Brush the top crust with the beaten egg and sprinkle on some coarse sugar. Cut slits in the top crust to let the steam escape. Chill for 1 hour.
  9. As the pie chills, it’s time to put a baking sheet on the bottom oven rack, preheating the oven to 425 degrees Fahrenheit for at least 30 minutes.
  10. Once the baking sheet has been heated for 30 minutes, place the pie directly onto it. Reduce the oven’s temperature to 375 degrees Fahrenheit. Make sure to rotate the pie as needed and bake until the pie is bubbly (typically anywhere between 1 hour and 1hour, 10 minutes).
  11. Transfer to a rack and allow to cool until the filling sets (around 3 hours).
